Colombiana Chicken with Fried Cauliflower

This is what world fusion food is all about…

South America and the Mediterranean mix beautifully in this hearty meal.

(Recipe calls for cheese and cream but you can cook without- me 80/20 ok =)


INGREDIENTS

  • 1 ½ pounds of chicken
  • 1 head cauliflower, chopped bite size
  • 5 eggs
  • ¼ cup parsley
  • ¼ cup jarlsberg cheese (lactoPaleo ok)
  • ¼ cup crema or creme fresh

serves: 4-6

  • 2 tablespoon butter
  • 2 tablespoon garlic
  • 2 tablespoon white vinegar
  • 1 tablespoon water
  • 1 tablespoon ground mustard seeds
  • ½ cup virgin coconut oil
  • sea salt & pepper


** DIRECTIONS
  1. In skillet saute butter, garlic, salt, and chicken till almost fully cooked.
  2. Cook over boiling water or double boiler, whisk 2 eggs, vinegar, water, mustard, and crema until smooth. Pour over chicken and mix.
  3. In mixing bowl mix 3 eggs, cheese, parsley, salt & pepper. Dip cauliflower in mixture then deep fry in coconut oil and remove onto paper towel.
