Dirty Cajun Kale with Pork, Liver, and Sausage

A spicy substitute for dirty rice with added meat heartiness!!! Dirty is GOOD!


  • 10 ounces kale, chopped
  • 1 pound ground pork
  • 4 ounces chicken liver, chopped
  • 4 ounces, chicken spicy sausage, chopped
  • 4 ounces uncured ham, chopped
  • 1 large green bell pepper, chopped
  • ½ cup celery, chopped
  • ½ cup green onions, chopped

serves 4-6

  • 2 cups chicken broth
  • 3 tablespoon garlic
  • 2 tablespoon thyme
  • 2 tablespoon cayenne pepper
  • 2 tablespoon cajun seasoning
  • 2 tablespoon butter
  • sea salt

  1. Boil liver in small pot with ½ of the green onions till cooked, chop and set aside.
  2. In large pot saute 1 tablespoon butter, 2 tablespoon garlic, rest of onions, celery, bell pepper, and ham until veggies are translucent. Add pork, sausage, liver, and salt and spices and brown meat.
  3. When meat mix is brown add 1 cup of broth.
  4. In separate skillet, saute 1 tablespoon butter, 1 tablespoon garlic, add kale, 1 cup broth. Cover and cook for 3 minutes. Add ingredients to meat mix and cook together till most of the broth has evaporated.
