Herb Chicken Paleo Pasta with Mushroom Sauce

I know, I know, Paleo Pasta sounds dubious, but let’s just keep it real- good for the 20% of the time!

If you can’t order Paleo Pasta, try Organic Quinoa Pasta.


INGREDIENTS

  • 1 ½ pounds chicken, diced
  • 16 oz mushroom, diced
  • 14 oz tomatoes, diced
  • 4 sprigs rosemary
  • 4 sprigs thyme
  • 2 tablespoon butter

serves 4-6

  • 2 cups chicken stock
  • 2 teaspoon gluten free all purpose flour
  • 2 tablespoon garlic
  • sea salt & pepper

Choose Paleo Pasta or Quinoa Pasta and cook as directed.


** DIRECTIONS
  1. In large skillet saute butter and garlic, add chicken, salt, and pepper. Cook till slightly brown.
  2. Add mushrooms, tomatoes, herbs, and chicken stock and bring to boil.
  3. Mix flour in ¼ cup of water until diluted and stir into pot. Cook for another 10 min then add your pasta and enjoy!
