Meyer Lemon Herb Chicken with Sweet Spring Farmer Slaw Salad

Obviously on a slaw kick; hee-haw!

So easy even a city girl can make it ;-)


INGREDIENTS

  • 1 ½ pounds chicken
  • 2 Meyer lemons, juiced
  • 2 sprigs rosemary
  • ¼ cup dill
  • ¼ parsley
  • ¼ olive oil
  • 1 tablespoon cayenne pepper
  • 5 ounces broccoli slaw
  • 5 ounces shredded carrots
  • 5 ounces pea shoots

serves 4-6

  • ¼ cup cilantro
  • ¼ cup almond slivers
  • ½ cup strawberries, sliced
  • ¼ cup dried cranberries
  • 2 tablespoon olive oil mayonnaise
  • 2 tablespoon maple syrup
  • sea salt

** DIRECTIONS
  1. Marinate chicken in lemon, garlic, rosemary, dill, parsley, salt, pepper, and olive oil for 1 hour or longer in fridge.
  2. Grill chicken until done.
  3. In large mixing bowl add broccoli, carrots, pea shoots, cilantro, almonds, strawberries, cranberries. In small mixing bowl mix mayo and maple syrup together then pour over salad and toss.
