William Levy Inspired Paleo Chicken Menu or El Fuego Baila Pollo

Don’t tell my BF…

Although, he did say, “this is one of the best meals you’ve made; on a scale of 1-10, easily 17!”

So I guess he likes WL as much as I do =)


INGREDIENTS

  • 2 ½ pounds of dark chicken thighs
  • 4 ripe avocados, diced
  • 4 juicy tomatoes, diced
  • 2 tablespoon lime juice
  • ¼ cup cilantro, ripped
  • 2 cups yams, thinly sliced

serves: 4-6

  • ¼ cup olive oil
  • 2 tablespoon garlic
  • 2 tablespoon cayenne pepper
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 3 tablespoon butter
  • 1 teaspoon nutmeg
  • sea salt

** DIRECTIONS
  1. Marinate chicken in garlic, 1 tablespoon cayenne pepper, oregano, cumin, salt, olive oil for 1 hour or more in fridge.
  2. Grill chicken till done.
  3. In skillet melt butter, saute yams, add ½ tablespoon of cayenne pepper, salt, nutmeg. Cooks in 7-10 mins.
  4. In bowl mix avocados, tomatoes, cilantro, lime juice, rest of cayenne pepper, and salt.
  5. Serve chicken on a hot bed of sweet & spicy yams and smother with avocado!
